Beach Vacation Meal Prep for 10 People: Vegetarian-friendly

When searching online for meal plans for large groups I was bombarded with unhealthy options. I didn't want to eat heavily processed food with tons of added sugar. It also needed to be vegetarian and omnivore friendly.

Our group of friends loves eating well so they were okay with spending a little more to have quality food. I also enjoy cooking so I wanted to try out a lemon pesto pasta recipe and bring back the crowd favorite, Na'an Pizzas.

Breakfast and lunch were free for all. Grab/cook whatever you want and prep your own burrito/sandwich for the beach.

Now that I have two beach trips with 10+ people under my belt, I've honed in a great crowd-pleasing menu and shopping list.

Naan Pizzas
Notes:
  • I only used the pictures in the recipe as my guide
  • I used the pre-made pesto from Costco as my base and didn't add balsamic
  • I added asparagus. Roast the frozen asparagus for 8 mins at 400 degrees
Lemon Pesto Spaghetti
Notes:
  • I tripled the sauce recipe
  • Used two boxes of Linguine (cooked al dente)
  • I roasted one bulb of garlic and blended it in with the pesto sauce

  • We didn't do put Kale in it

Agape Feast
This is a special Friday night tradition that we do. Not only do we have a fresh finger food meal, but we take the time to appreciate one another. The tradition goes as follows, you turn to the person on your right and ask them what they would like and you serve them a few pieces of the item, then you share why you appreciate them. If your group is small enough, six or less, and you aren't ravenous you could then repeat the process by appreciating and serving the person to your left. 

An agape feast can feature any finger foods, but here are our favorites:
  • Hummus
  • Variety pack of crackers
  • Everything Pretzel Chips
  • Pita Chips
  • Baby Bell Cheese
  • Assorted Cheese Tray
  • Four Pink Lady or Honey Crisp apples, thinly sliced
  • Aloutte Spreadable cheese
  • Turkey cold cuts
  • Grapes (especially Cotton Candy Grapes if they are in season!)
  • Baby Carrots
  • Celery (cut into 2-3 inch sticks)
Since our vacation started on Thursday and the Agape feast was on Friday night we were able to use all the leftovers as snacks on the beach

Our total cost was $741.98. That made it out to be $5.70 per meal per person. Everyone did bring home quite a few snacks so it was an even better deal than that. 

Things you might want to consider purchasing/bringing along with you:
  • Plastic table cloths. I would get at least two. 84 x 54
  • 2 Plastic Container, 1.5 gallon
  • Lighter (there might be a BBQ you'll have access too)
